Turkey Tacos with Tomatillo Salsa

In Mexico, tacos are small, fresh, and simply prepared. I once had a taco al pastor there that was mind-bendingly good, and it had all of three ingredients! Somehow, when the taco got to the United States, it morphed into double-crust, Taco Bell Beef Supreme Chalupa with sour-cream-out-of-a-caulking-gun madness. Here I do my best to honor the Americanized taco everyone seems to love, while bringing some traditional flavors into the picture.

Grilled Turkey Kebabs À La King

This was originally a rich chicken dish made with lots of cream and sherry, peas, and pimientos, and served on hot buttered toast points or in pastry shells. There are as many stories about its origin as there are versions of the recipe. It likely made its debut at the Brighton Beach Hotel in New York at the turn of the 19th century, created by the chef in honor of the owner, Mr. E. Clark King II. I went with a green-pepper version and added celery seeds to the sauce because that’s how I like my à la king. If you can’t live without the pimientos, feel free to add them—they will have virtually no impact on the fat and calorie content.

Super-Light Mexican Chili Con Carne with Beans

There is much debate over whether chili should have beans in it. Some folks think beans make chili cheap—in the same way, they say, that breadcrumbs do to meatloaf. Actually, in both cases, those interloping ingredients contribute substantially to the dish. Breadcrumbs make meatloaf tender, while beans add texture and additional meatiness to chili—and lots of fiber and antioxidants, too.

Jambalaya

This Cajun dish is so associated with good times that Hank Williams named a song after it. The original isn’t so good for you, though. I made a few changes to the classic to make it easier to prepare—and much healthier. White rice has been replaced with brown, and much less fat is used to cook the vegetables and meat. Feel free to improvise by adding chicken, fish, or vegetables.

Philly Cheesesteak

Is it the bun, the beef, or the processed cheese that makes a Philly cheesesteak America’s most famous hero sandwich? Some say all three are equally important. Suffice it to say that from my research, there will never be agreement on this issue. We can all agree, though, that this whole-grain, low-fat sandwich is a different kind of hero.

Tuna Melt

This sandwich is so old-school—and I love it. Using water-packed tuna and a reasonable amount of low-fat mayonnaise takes this diner-food classic off the “Do Not Eat” list.

Shrimp Po’ Boys with Spicy Mayo

Po’ boys are a kind of sub sandwich from the sultry state of Louisiana, consisting of fried meat or fish served on a crispy French-style baguette. Traditionally they are made with fried shrimp or oysters, though soft-shell crabs, catfish, crawfish, Louisiana hot sausage, and roast beef have been known to make an appearance. Served hot, the shellfish, fish, or meat is dressed with some combination of lettuce, tomatoes, peppers, pickles, onions, and mustard or a spicy mayo. In this version the fat and calories are reduced to a fraction of the original by faux frying the shrimp, using low-fat mayonnaise, and replacing the traditional white-flour baguette with sprouted-grain bread.

Wedge of Lettuce with Bacon and Blue Cheese

Who doesn’t love a big thick chunk of iceberg lettuce with bacon and blue cheese dressing alongside a juicy cowboy-cut ribeye? It’s one of my favorite steakhouse meals. Problem is, at 700-plus calories and more than 80 grams of fat—for the salad alone!—it’s a very bad bargain. Thankfully, the availability of reduced-fat blue cheese means you don’t have to choose between the steak and the salad.

“Cream” of Mushroom Soup

The highest form of “cream of” soup starts out with cooked, pureed vegetables and pure, fresh cream. The second-best incarnation of that same soup winds up being pastier, with cornstarch as a thickener and the fresh cream replaced with cheaper fats, like vegetable oils. There’s one more way to make cream soup, though—a way in which you get the freshest, purest, least diluted taste of the vegetables. There’s no cream in this recipe—and no cornstarch, either. You still get a great creamy texture by using a lot of mushrooms and chicken broth. The key is to not let the mushroom liquor (the juice expressed by the mushrooms as they cook) evaporate, and to use a good blender to create a luxurious puree.

Buffalo and Blue Chicken Tenders

Buffalo wings are, hands down, one of the greatest dishes ever created. The combo of hot sauce and butter on a crispy chicken wing is sublime. Here’s the downside of these tasty things: Wing sauce is high in fat, chicken wings are high in fat, and the accompanying blue cheese dressing is high in fat. It all adds up to an astonishing 1,188 calories per serving. Here, the wings have been replaced with low-fat chicken tenders, the buffalo sauce with a great low-fat store-bought product, and regular blue cheese dressing with reduced-fat blue cheese dressing.

Oysters Rockefeller

Oysters Rockefeller was created in New Orleans at the turn of the last century. It was named for John D. Rockefeller, the richest man in America at the time, because he and the dish had something in common. If you don’t overcook them, oysters are juicy and creamy and taste luxuriously rich. Without changing too much from the classic recipe (aside from reducing the loads of butter), the fat content went from 22 grams to just under 6 grams—with most of that coming from the oysters themselves. This dish is a fabulous throwback that won’t set you back. Oysters Rockefeller are baked in piles of coarse salt not just to anchor the liquid in the oyster shell but also because salt is an excellent conductor of heat.

Very Berry Crumble

I like to use frozen berries for this crumble. Not only can I have it any time of year, but the juices left in the bag after thawing provide sweetness (without adding a lot of sugar) and sauce for the crumble.

Cajun Jumble-laya Stoup

This jumble is a lot like jambalaya, so I call it a Jumble-laya. This is one of those flexible recipes. You can substitute turkey or tender cuts of pork and beef for the chicken. Go all seafood by bumping up the amount of shrimp and adding crabmeat at the end to just heat it through. Andouille sausage is a spicy, smoky sausage with a flavor that packs a punch. It is used in Cajun-style food and is a staple in gumbo and jambalaya. Is okra not your thing? Substitute frozen defrosted French-cut green beans.

Double-Dipped Buttermilk Chicken Fingers on Spinach Salad with Blue Cheese Dressing

You have to buy a quart of buttermilk in order to get the 2 cups you need for this recipe, but I’ve got your back on the extra 2 cups: transfer it to a large resealable food storage bag and freeze it. Don’t forget to label the bag—if you’re like me, you have enough mystery items in your freezer already!
