Cajun Chicken Stew
When I was growing up in Louisiana, nothing made my mouth water like the smell of onion, bell pepper, and celery cooking in my mom's dark Cajun roux. For maximum flavor, use the whole chicken and leave any fat attached.

Spicy Shrimp with Andouille Sausage on Grits
"On a tour of the South, I had dinner at The Boathouse, an outstanding restaurant in Charleston, South Carolina," says Marion Hunt of Valhalla, New York. "Their spicy shrimp and sausage with grits was my favorite meal of the entire trip."
The creamy grits and spicy sauce create a nice contrast. Adjust the amount of hot pepper sauce to make the dish as hot as you like.

There's a southern accent to this entrée, so round out the menu with corn muffins, coleslaw and three-bean salad; then bring on the coconut layer cake.

The shrimp are simmered and served in a peppery, New Orleans-style sauce-peel them at the table as you eat. Coleslaw, crusty French bread for sopping up all the sauce, and plenty of napkins are ideal accompaniments. For dessert, crullers and coffee with whipped cream would be easy substitutes for traditional beignets and café au lait.
Chicken Thighs with Creole Mustard-Orange Sauce
At Brigtsen's in New Orleans, chef Frank Brigtsen makes a version of this dish with duck, accompanied by corn bread and pickled onions. Offer those sides as well as some green beans, then finish with pecan pie.

Crabmeat Martin
Joe Martin was both a hero and a mentor to me. He was an old-fashioned New Orleans kitchen guy who never had national fame as a chef, but he could cook better than a lot of household names. Not only that, he was a great teacher, developing an army of everyday workers who were the backbone of good food served all over town. The funny thing is, for all the people he taught, he never wrote down his best dishes. He used to make this one hunched over like it was a big secret. I pieced the recipe together from some of the guys he taught. Joe, if you're looking down on this dish from someplace where the work isn't so hard, I hope you don't think we're leaving something out!

If there is any "magic" to our cooking, it's in seasoning mixes such as this. With this mixture, we try to unmask the depth of flavor in our native seafood, not overpower it. We want every bite to display a full flavor profile, so we liberally sprinkle seasoning on the entire piece of fish. That means both sides. Make a decent-sized batch of this mixture so it will always be handy, then rub it or sprinkle it on the food. Remember, mixtures such as this cost very little to make yourself but quite a lot if you buy them at retail.
