Red Snapper with Fava Bean Purée
I love the look, flavor, and textures of this delicate and pretty dish. It’s a perfect way to spotlight the flavors of spring, when fava beans are in season. Other times of the year you can substitute frozen lima beans for the favas; either way the purée is bright from the mint and satisfies your starch cravings. Just be careful not to overcook the beans, as they can turn an unattractive gray. Red snapper, with its pinkish hue, is a quite flavorful white fish that works perfectly with the fava beans. Finish it off with a drizzle of really good-quality extra-virgin olive oil.
Honey-Balsamic Lamb Chops
In my experience even people who complain that lamb can taste too gamey love lamb chops. I would be lying if I didn’t also acknowledge that lamb chops are the most expensive cut, but I think they’re worth it, because they deliver a lot of flavor in just minutes. These chops, with a sweet tangy dressing drizzled on top, are an easy and fast meal that delivers, specifically on special occasions or for a Sunday night family dinner. Even Jade loves them!
Chicken and Shrimp with Pancetta Chimichurri
Chimichurri is the A1 sauce of Argentina, and no self-respecting steak there would be served without a dose of this herby green sauce. But chimichurri also has a lot in common with an Italian salsa verde, which gave me the idea to pair it with the more delicate combo of chicken and shrimp. I add oregano for a deep earthiness, and crunchy bites of pancetta put it over the top; you’ll want to serve this sauce over everything from broiled fish fillets to sliced tomatoes or even crostini.
Fusilli with Spicy Pesto
I don’t cook with jalapeño peppers often because I’m not a huge fan of spicy food, but when I was served grilled fish topped with a spicy pesto at a beach-side restaurant near San Diego, I loved the way the heat woke up the flavor of the fish. I thought it could do the same for pasta, and sure enough, it’s a great combo. Packed with spinach and arugula, this pesto is more condiment and less sauce than the typical basil pesto, and a bit lighter thanks to the substitution of walnuts for oily pine nuts. Fusilli is the perfect partner for any kind of pesto because the sauce gets trapped in the ridges so you get flavor in every bite. Serve leftovers of the dressed pasta with roasted chicken, fish, or beef.
Beef Skewers with Cherry Tomatoes and Parsley Sauce
Beef filet always makes an occasion special, but in the case of these mini beef kebabs it’s the parsley sauce—almost a fresh salsa—that makes the dish shine. For an interesting change, mix it up and substitute fresh pineapple chunks for the tomatoes; they make for a surprisingly harmonious combination. One note: Don’t marinate the beef any longer than three hours because the vinegar in the marinade will break down the meat and ruin its texture.
Artichoke and Bean Bruschetta
Rome is famous for its artichokes, and in the Jewish district you can buy amazing fried whole artichokes on street corners. Back home, I use frozen artichokes for ease and I love combining them with beans in a creamy dip for bruschetta, a favorite snack throughout Italy. The crispy, salty prosciutto highlights the subtle flavor of the artichokes and adds crunch.
Roasted Eggplant and White Bean Crostini
This is rustic and simple, and deeply satisfying. Pureed beans can get a bit crusty when exposed to air, so if you make these ahead of time, drizzle a bit of a nice fruity olive oil over each crostini to keep it fresh and make it glisten. If you want a lighter version, you can certainly serve this on cucumber rounds, but I love the way the smoky flavor of the eggplant and the grilled bread work together.
Cranberry Clafouti
The Clafouti is essentially a fruit-laden baked pancake. I love this Americanized version, which is crunchy and sweet.
Cookie Dough
Cookies are always easy to make, but even they can use streamlining. One solution is to whip up a single dough in a food processor and finish it in different ways. This basic dough is great plain (with white sugar or brown or even molasses), but it can be varied with ginger or a mix of spices, chocolate chips, or orange. Or with one batch of dough you can make four different types of cookies—add lemon juice and zest to one-fourth of it, for example, chopped walnuts to the second, raisins to the third, and coconut to the fourth. Finally, it can produce rolled-out, cut, and decorated cookies; just chill it first to make it easier to handle. You might call this “the mother of all butter cookies.” Make these with more flour and they’re cakey; use more butter and they’re delicate, with better flavor; here, I go for the second option.
Pineapple-Ginger Sorbet
A special combination, decidedly Asian. Use fresh ginger if at all possible.
Mayonnaise
Whether you work by hand or with a blender or food processor, it takes just five minutes to make mayonnaise, and when you’re done you have a flavorful, creamy dressing that is so far superior to the bottled stuff you may not recognize it as the same thing. Next to vinaigrette, it’s the most useful of all dressings, and despite its luxurious nature it contains little saturated fat. If you’re worried about the health aspects of using a raw egg, start with bottled mayonnaise and beat in a little oil and/or any of the suggested additions.
Red Pepper Puree
Roasted red pepper puree is incredibly useful, easy to make, and delicious—you can eat it with a spoon. It contains two basic ingredients, red bell peppers and olive oil, and both are always readily available. And since making a batch is about as difficult as scrambling an egg, and the puree keeps fairly well, there’s little reason not to have some on hand. If you are so inclined, you can flavor it with any number of herbs (thyme, basil, and parsley are fine) or spices, like cumin or chile powder (or minced chiles). I usually leave the sauce unadulterated. Of course you can use bottled or canned preroasted peppers (“pimientos”) here, though the results will not be as fresh tasting.
Sun-Dried Tomato Sauce
You can buy sun-dried tomatoes already reconstituted and soaked in olive oil, but they’re expensive. It’s certainly easy enough—and only slightly less convenient if you think ahead—to begin with dried tomatoes. They’re almost as tough as shoe leather when you buy them but can easily be reconstituted: Soak them in hot water to cover until they’re soft, about an hour. (You might change the water once it cools to hasten the softening.) Drain the tomatoes and marinate them in a good fruity olive oil to cover (a half cup or more) for at least an hour. After that, making the tomato paste takes just a moment. Traditionally, the tomatoes are pounded, usually with garlic, in a mortar and pestle. I use a small food processor and like the resulting texture very much.
Parsley-Vinegar Sauce
When you get past using parsley as a garnish and sprinkle a handful on top of a dish just before serving, you begin to appreciate the bright, clean flavor of this common herb. And when you realize that it remains in season far longer than basil, rosemary, or other popular herbs, you get a further sense of its value. You can also blend parsley with vinegar to make a sharp, spiky sauce that is an ideal accompaniment to the simplest grilled, broiled, or roasted meat—great on well-browned steaks, pork, or chicken, or on Salmon Burgers (page 107).
Marjoram “Pesto”
Marjoram is related to and resembles oregano, but its flavor is better. Oregano is a good but not perfect substitute. This sauce is excellent over simply cooked seafood.
Pasta with Green Beans, Potatoes, and Pesto
Pesto has become a staple, especially in late summer when basil is best. But pasta with pesto does have its limits; it’s simply not substantial enough to serve as a main course. The Genoese, originators of pesto, figured this out centuries ago, when they created this dish, which augments the pesto with chunks of potatoes and chopped green beans, making it a more complex, more filling, and more interesting dish. Recreating this classic dish is straightforward and easy. Note that if you start the potatoes and pasta simultaneously, then add the green beans about halfway through cooking, they will all be finished at the same time and can be drained and tossed with the sauce in a snap. This technique may sound imprecise, but it works.
Pasta with Walnuts
You might think of this as winter pesto, with a higher percentage of walnuts and the always-available parsley filling in for summer’s basil—though if you can find good basil, by all means use it.
Pizza Dough
People can never seem to get enough pizza, and how many a pizza will serve depends on the heartiness of the toppings, the thickness of the crust, and whether you’re serving anything along with it. But I’ve found generally that this dough recipe will make two twelve- or thirteen-inch pizzas and that pizzas made with the following toppings will serve at least four people.
Fastest French Bread
I won’t claim that this is the best bread you’ve ever eaten, but it’s the fastest yeast bread imaginable, and it’s better than anything you can buy at many supermarkets. It requires little effort, less attention, and rounds out most simple dishes into filling meals.
