Watermelon Salad
Here, watermelon gives up its usual place at the table as a fruit and goes to work in a role usually occupied by its cousin, the cucumber. The melon is a lovely foil for the salty feta, tangy onion, and tart vinegar. It makes a refreshing and unusual salad for any summer brunch, luncheon, or dinner.
Trey’s Baked Grouper Parmigiano
We have many good local seafood suppliers here on the coast, but one that has consistently been there to serve me with good, fresh seafood, day in and day out, is Mathews Seafood. This business was started years ago by Louis Mathews. Today, his three sons, Chris, Trey, and John, carry on in their father’s ootsteps. I can always count on these young men to guide us in selecting the best they have to offer. Thanks, guys!
The Lady’s Bouillabaisse
This dish is a specialty of the South of France, but living or visiting on the coast of Georgia you are quite likely to see it offered on menus. I hope you enjoy The Lady & Sons’ version of this wonderful French dish. Feel free to add any of your favorite shellfish to the pot.
Bourbon Beef Tenderloin
This recipe is for the grill. Beef can also be cooked in the oven at 350 degrees for 45 minutes to 1 hour. Use a meat thermometer: rare—115 to 120 degrees; medium rare—130 to 135 degrees; medium—140 to 145 degrees. Buy a whole tenderloin, about 4 1/2 to 5 pounds, and have the butcher remove the “silver” connective tissue.
Esther’s Dill Coleslaw
Esther Shaver owns one of the best bookstores in town. Her store, E. Shaver’s, was one of the first places to carry my cookbook. Not only is her store great, but so is her coleslaw!
Brown Butter and Fresh Rosemary Sauce
In its usual state—with cream and fat in a stable suspension—butter has a creamy taste. But this changes dramatically when it is heated quickly and starts to brown. The cream solids and fat separate; the particles caramelize and take on a nutty flavor as they toast. I like butter both ways, and I use either as a base for pasta sauce. Try making brown-butter sauces with other herbs and seasonings to use with the pastas suggested on the preceding page.
