Herb Butter

This recipe makes much more than you’ll need for one meal, but you won’t be sorry you have extra—it spruces up everything from toasted bread and steamed vegetables to grilled fish or chicken.

Pat’s Skillet-Seared Steak with Herb Butter

Forget the grill; Southerners have been pan-searing steak in cast-iron skillets since what seems like the beginning of time. That’s true enough in my family, where “let’s fix a steak” translates directly to “put the skillet on.” According to my brother-in-law, Pat, the best way to eat said pan-seared steak is hot out of the skillet with a fat knob of butter melting away on top. He’s right, of course, and this dish—embellished with a profusion of fresh green herbs—is for him.

Pork Rillettes

This dish—an adaptation of an Anne Willan recipe I used to make at the Soho Charcuterie—is what my dad most often requested when I came home to visit. Rillettes are a classic French preparation similar to pâté that are made by slow-cooking fatty meat until it falls apart, packing the meat in the rendered fat, and allowing it to congeal. The resulting rough spread pairs elegantly with Rosemary Cheese Crackers (page 8) or Cornbread Toasts (page 18), grainy mustard, and pickles. The most important thing to keep in mind is that rillettes need to cook very slowly at a low, steady temperature, so make sure the cooking liquid doesn’t boil once you put the dish in the oven.

Pan-Seared Guinea Hen with Roasted Tomatoes, Okra, and Butternut Squash

Guinea hens are birds, related to pheasants, and are an excellent and highly flavorful alternative to chicken. Because they’re smaller—usually two or three pounds—even whole birds cook quickly and yield just the right amount of meat for one meal. If you can’t find guinea hen, a small chicken will do the trick nicely.

Chicken-Fried Quail with Creamy Thyme Gravy

This crispy fried quail is for anyone whose favorite part of fried chicken is the crust. Because quail are so small, you get a satisfyingly high crust-to-meat ratio—but the meat itself is flavorful enough to stand up to all that crust. I drape my version in a veil of creamy, herb-flecked pan gravy.

Autumnal Chicken Pot Pie

This is not your typical pea-and-carrot-laden pot pie. Inspired by fall flavors, this sophisticated version is loaded with butternut squash, oyster and chanterelle mushrooms, and fresh sage—all tucked under a layer of golden, flaky puff pastry.

Chicken and Dumplings

I grew up on this velvety stew of shredded chicken and puffy dumplings. Not only is it comforting and delicious, but, because it stretches a little meat a long way using just a few ingredients, it is yet another example of Southern culinary resourcefulness.

Chicken Under a Skillet

The inspiration for this dish came from Paula Wolfert’s excellent version of “chicken under a brick,” and from my brand-new, heavy-bottomed cast-iron skillet. Chicken under a brick—what Wolfert calls Italian fried chicken—is a traditional Tuscan preparation in which chicken is weighted with a clay slab over dry heat. The weight of the slab drives the juices and rendered fat back into the chicken as it cooks, resulting in succulent meat with crackly, golden-brown skin. Well, I soon put two and two together, and chicken under a skillet was born. Just think of it as Southern fried chicken’s long-lost Italian cousin. Note that you’ll want to let the meat marinate for several hours prior to cooking to get the big flavors that make this simple dish shine.

Crispy Chicken Cutlets with a Heap of Spring Salad

This dish contains all the flavor and crunch you expect from fried chicken, but with all the health benefits of using boneless, skinless chicken breast. Plus, you get bonus points for scattering the cutlets over a tender arugula salad bursting with fresh herbs and drizzled with tarragon-infused Buttermilk Green Goddess Dressing.

Salty Tomato Butter

This easy butter preparation adds an unexpected flavor dimension to any dish and is equally good on steaks, steamed broccoli, roasted fingerling potatoes, or fish and rice.

Salmon Croquettes

I grew up on these tasty little fried cakes, which Granny Foster used to serve for breakfast with fried eggs and biscuits, or sometimes for supper along with mashed potatoes and coleslaw. Like most Southerners, Granny used canned salmon in her croquettes. I opt instead for freshly poached or grilled salmon, a move that allows the delicate, grassy flavor of the fish to come through. Crispy and satisfying (the name croquette comes from the French for “to crunch”), these easy treats are an excellent way to revitalize leftovers from last night’s salmon dinner, ensuring that the switch from canned to fresh fish does not necessarily sacrifice convenience.

Grilled Grouper with Heirloom Tomato Salsa

Last time I was at the SeeWee, an old-school seafood restaurant outside Charleston, I had an incredibly good plate of grilled grouper with fresh tomato salsa. Not only was the fish superfresh and perfectly cooked, but the salsa, a rough mix of vine-ripe tomatoes, white onion, and cilantro, was so simple and bright that it enhanced the flavor of the fish perfectly without overpowering it. I was so fond of it that I’ve been re-creating it at home ever since. It’s just the sort of light, fresh supper you want in the dead of summer.

Pot Roast Potato Cakes with Poached Eggs, Fresh Greens, and Horseradish-Mustard Vinaigrette

This hearty dish, which is a great way to reinvigorate leftover Foster Family’s Pot Roast with Herb-Roasted Vegetables (page 199), is inspired by Southern dishes featuring “low” cuts of meat. With savory layers of potato, roast, and poached eggs finished with the cool heat of the Horseradish Mustard Vinaigrette and brightened with fresh greens, this crowd-pleaser makes for a decadent Sunday brunch, but it can just as comfortably double as the main event at dinner. Serve with warm, crusty toast for a complete meal.

Pork Tenderloin and Buttermilk Biscuits with Roasted Tomato-Thyme Gravy

My mom always made this hearty breakfast when my husband, Peter, and I came to visit her in Memphis; it is so Southern that eating it always made me feel I was really home. (I don’t think Peter, who is from New York, had ever had either pork tenderloin or gravy for breakfast.) The roasted tomato gravy is what makes it so special; roasting the tomatoes cuts and deepens their bright acidity, adding complex layers of flavor to the savory sauce. You can mix things up by making this dish with sausage patties or leftover slices of Grilled and Roasted Filet of Beef with Crispy Roasted Shallots (page 193) instead of the pork tenderloin. Either way, you’ll want to use the biscuits to sop up the last drops of gravy.

Buttermilk-Sage Dinner Rolls

These splendidly soft dinner rolls, which my aunt June used to make for special occasions, are the Southern equivalent of brioche, minus the egg. I’ve added fresh sage for an aromatic boost.

Holiday Cornbread Dressing

This moist and flavorful cornbread dressing—or what you non-Southerners may call stuffing—appeared in Martha Stewart Living, and it remains one of our most requested recipes at the Market. The mix of pillowy egg bread and crusty, grainy cornbread is a real winner. Try stirring in leeks and wild mushrooms in spring or oysters and hot Italian sausage in winter.

Minted Sweet Tea

When Southerners say “tea,” they mean basic black—as in Lipton or Tetley, not English Breakfast or Earl Grey—iced and sweet. It is the ubiquitous, unofficial drink of the South.

My friend Wendy makes the best Bloody Marys—full of punchy, spicy flavor. Serve them with little dishes of pickles as well as the usual cucumber and celery spears for fun mix-and-match garnishes.
