Cinnamon Pear Compote
This versatile fruit sauce is excellent with both Pumpkin Waffles (page 138) and Buttermilk Waffles (page 135). Try stirring it into yogurt, spooning it on top of ice cream, or serving it as you would a fruit cup. Bosc pears work the best here because they are juicy, yet they hold their shape. Use a softer pear and you may wind up with pear sauce, which certainly tastes good, but it isn’t as visually appealing as this raisin-flecked chunky compote. If storing for later use, cool the compote completely before covering it with a lid or plastic wrap. This will keep in the refrigerator for up to one week. If the compote is cool, reheat it over low heat to serve hot. Or you can serve it chilled or at room temperature.
Cinnamon Sugar Butter
Use this sweet spiced butter for the most amazing cinnamon toast. After you toast the bread of your choice, spread on some cinnamon butter and stick it under the broiler for a few seconds to melt. Store the cinnamon sugar butter in the refrigerator for a week or freeze it for several weeks.
Fresh Herb Butter
This butter is delicious with eggs, seared fish, steaks, pork chops, chicken, or to spread on savory muffins or scones. When making it, it is important that the butter is still a little firm, but not so cold that it won’t whip in the mixer. Take the butter out of the refrigerator a half hour to an hour before making the compound. For best results, don’t freeze this butter.
Warm Eggnog
Wonderful but very rich, eggnog is best served in small portions. Though good hot or cold, I always serve it hot in the winter. This can be made a day ahead of time and kept in the refrigerator.
Spicy Zucchini with Mint
Another great make-ahead dish, this is an appealing way to serve zucchini at room temperature or chilled. Salting the zucchini and letting it sit for about 30 minutes gets rid of excess liquid and keeps this dish from becoming watery. If you make this ahead of time, remove it from the refrigerator about thirty minutes before serving and taste it. You may find that you need extra shakes of salt and pepper, and an extra squeeze or two of lemon juice.
Sweet Italian Sausages
With the fresh, zesty taste of basil and garlic, these juicy sausages are a perfect homemade accompaniment to a variety of egg dishes. Ask the butcher to grind up the pork butt, and make sure the pork is well chilled (32°F) before starting on this recipe. The meat and fat need to stay very cold during the grinding and mixing process. Otherwise, the sausage comes out mealy because the fat doesn’t maintain its form and melts into the meat.
Tomato, Basil, and Buffalo Mozzarella Scramble
Made in summer at the height of tomato season, this scramble is wonderful with fresh mozzarella or burrata, a delicious, buttery-textured Italian cheese. It’s important not to overcook the tomatoes or the basil, which will keep its bright green color when added toward the end.
Cream Cheese Cinnamon Rolls
When our neighbors made this recipe on Saturday mornings when we were growing up, the entire neighborhood smelled like cinnamon heaven. These frosted cinnamon rolls are a little more complicated to make than scones or muffins, but they are definitely worth the effort. The cream cheese makes the dough flakier than that of many cinnamon rolls, and the filling is rich and delicious. You can prepare these the night before and let them rise for an hour before baking them in the morning. The uncooked cinnamon rolls also freeze very well for a couple of weeks.
Baked Marrow, Ground Pork
A contemporary take on the ground meat–stuffed marrow. This economical supper stands or falls by the way the meat is cooked. The real flavor here comes from the caramelization of the sugars in the meat. To make the most of this, I have the oil at quite a high temperature as I add the meat, then resist the temptation to stir or turn the meat too soon. Continual movement will result in “wet” rather than crisp-edged, golden ground pork.
Zucchini and Green Lentils to Accompany Slices of Dark and Interesting Ham
Green lentils and bacon has long been a salad worth making. I will occasionally fold in some shards of crisp, olive-oil-drenched toasted ciabatta or lots of whole parsley leaves. A couple of years ago I started moving the whole thing up a notch by putting the lentils against a few pieces of exquisite Spanish ham and adding a certain smokiness with wide slivers of zucchini, their edges blackened from the grill. This has become a late-summer lunch I can’t get enough of.
A Lemon-and Garlic-Scented Side Dish
Middle Eastern cooking is flecked with the cool pepperiness of fresh mint. Italian, and especially Sicilian, cooks include mint with zucchini, often in tandem with garlic and lemon. I find mint invigorating with all summer squashes and often make a dish where they (pattypan is particularly suitable) are cooked in olive oil with mint and the merest hint of garlic. It is very good with grilled fish.
A Supper of Zucchini, Tomatoes, and Basil
2008 saw not only my usual terra-cotta pots of Striato d’Italia on the back steps but also a trailing variety known as Caserta, a pale fruit the color of mint ice cream, with darker stripes. The light-skinned varieties such as Clarion, Di Faenza, and the almost ivory Lebanese White Bush look particularly delicate and summery when sautéed in butter and olive oil with a handful of herbs thrown in at the last moment, the scent of late summer hitting you as you spoon over the pan juices. Perhaps that should be swoon. Squashes of every variety love a tomato. Occasionally you could argue they need it too. Late last summer, just as the beans were forming on the poles in the vegetable beds, I made a last-minute, rough-edged supper with little more than a few zucchini and a couple of tomatoes. It was done in fifteen minutes flat. There are many who would insist on skinning and seeding the tomatoes for this, but not only do I think it unnecessary here, it also means missing out on all their rich juices and scrunchy seeds.
Zucchini on the Grill
Young summer squashes of any sort grill rather well, but better if you salt them first, so that they relax rather than harden over the heat. As soon as they are lifted off the bars, I toss them in dressing, keeping them moist and silky. A side dish, and very good with mozzarella or feta.
Fruit and Nut Filling for Baked Zucchini
The ideal here would be the pale, plump zucchini varieties you find in Middle Eastern markets. I visit one near London’s Edgware Road that even has them ready prepared, their seeds removed for stuffing, and packed into little plastic crates. If these torpedo-shaped squashes escape me, and they often do, then I use the ubiquitous type, halve them lengthwise and scatter the filling loosely over the top rather than making a clumsy attempt to stuff them. The classic zucchini stuffings of the Middle East vary from family to family but usually include cooked rice or ground lamb, or occasionally walnuts, pine nuts, or hazelnuts, stirred into softened onion and then lightly seasoned with allspice, tomato paste, and parsley. The effect is a moist filling of elegance and pleasing predictability. I sometimes want something more unusual. A stuffing that intrigues as much as it pleases.
A Soup of Tomatoes and Crab
There is a small but distinguished group of seafood and tomato dishes, from the Provençal soups with their croûtes and brick-red rouille to Portuguese soup-stews reeking of garlic. With those dishes as a starting point, I spent some time working on a soup of tomato and crab. After making several versions that were too thick and rich, I took the step of bringing chile and lemongrass into the proceedings to add a breath of freshness and vitality. This is a bright-tasting soup that sings with the sweet heat of chile and crustacean. To add enough substance to treat it as a main dish (when this recipe will serve 3 or 4), I introduce a last-minute addition of bean shoots or maybe some shredded, very lightly cooked snow peas.
