A Mildly Spiced Supper of Cauliflower and Potatoes
If a cauliflower is happiest under a comfort blanket of cream and cheese, we can run with the idea, dropping the cheese and introducing some of the milder, more fragrant spices such as coriander and cardamom into the cream instead. With its toasted cashews and crisp finish of spiced fried onions, this is a mild dish, so I see no reason to soften the blow with steamed rice, preferring instead to eat it with a crunchy salad of Belgian endive and watercress (or some such crisp, hot leaf ), using it to wipe the sauce from my plate.
Roast Lamb with Mint, Cumin, and Roast Carrots
Young carrots, no thicker than a finger and often not much longer, appear in the shops in late spring, their bushy leaves intact. Often, they have a just-picked air about them, their tiny side roots, as fine as hair, still fresh and crisp. At this stage they lack the fiber needed to grate well, and boiling does them few favors. They roast sweetly, especially when tucked under the roast. The savory meat juices form a glossy coat that turns the carrot into a delectable little morsel. I have used a leg of lamb here but in fact any cut would work—a shoulder or loin, for instance. The spice rub also works for chicken.
Carrot and Cilantro Fritters
Vegetable fritters, given a savory edge with a flavorsome farmhouse cheese, are just the job for a quick lunch. Cheap eating, too. Grate the carrots as finely or as coarsely as you like, but you can expect them to be more fragile in the pan when finely grated. A watercress salad, washed, dried, and dressed with olive oil and lemon juice, would be refreshing and appropriate in every possible way.
A Salad of Carrot Thinnings
Carrots have been one of my quiet successes. The carrot thinning salad has become a regular weekly addition throughout the summer. Root vegetables no bigger than your little finger have a charm to them that insists you leave them whole. Cooking them, in shallow water so that they steam rather than boil, takes barely a minute or two. I dress them as soon as they are out of the pan, sometimes with a light, lemony dressing, other times with cilantro. To turn this into a main-course salad, add spoonfuls of ricotta or cottage cheese to which you have added pepper and some of the dressing.
A Crisp, Sweet-Sharp Relish for Christmas
The sour crispness of red cabbage makes it a good ingredient for a relish. Something stirring—hot, sharp, sour, bright—to introduce to a gamey pâté or a wedge of pork pie with softly collapsing pastry. Not normally given to making pickles and chutneys, I find this startling relish manageable without feeling I am going too far down the preserving route.
Sprout tops with Sesame Seeds and Oyster Sauce
Sprout tops share a luxury of growth and strong flavor with many of the Asian greens. One cold day in November I married them to an impromptu sauce of essentially Chinese ingredients. It worked. The tricky bit was working out what, in future, they needed to share a plate with. A slice of ham steak; a piece of lamb’s liver; a fillet of mackerel, its skin crisped on the grill; a pile of sticky rice with some finely sliced air-dried sausages; a grilled mushroom the size of a saucer. All will work. Eminently.
Marinated Mackerel with Dill and Beets
Clean flavors here, a delightful main-course salad for a summer’s day. You could use other fish, such as red mullet, if you prefer, but the richness of mackerel’s flesh goes well with the sweet beets and tart marinade. Some watercress would be good with this, and maybe a few slices of dark bread and butter.
Chickpea Patties, Beet Tzatsiki
The chickpea possesses a dry, earthy quality and a knobbly texture that I find endlessly useful and pleasing to eat. No other member of the legume family has quite the same mealy, warm nuttiness. This is the bean I want bubbling on the stove when there is pouring rain outside, filling the kitchen with its curiously homey steam as it slowly simmers its way to tenderness. Unlike its more svelte cousins, the flageolet and the cannellini, the chickpea is almost impossible to overcook. The length of time it takes to soften rules it out of weekday cooking for me, so I sometimes resort to opening a can. Chickpeas, often labeled ceci or garbanzo, leave their can relatively unharmed, which is more than you can say for a flageolet. They make good patties that you can season with cumin, chile, garlic, sesame, or coriander and fry until lightly crisp on the outside. Chickpea patties need a little texture if they are to be of interest. I process them only so far, leaving them with a texture that is partly as smooth as hummus with, here and there, a little crunchiness. The patty mixture needs a good ten minutes to rest before cooking. To calm the garlic notes, I spoon over a sauce of yogurt, grated cucumber, and mint or a similar one of shredded beets, taking care not to overmix it to a lurid pink.
A Tart of Asparagus and Tarragon
I retain a soft spot for canned asparagus. Not as something to eat with my fingers (it is considerably softer than fresh asparagus, and rather too giving), but as something with which to flavor a quiche. The canned stuff seems to permeate the custard more effectively than the fresh. This may belong to the law that makes canned apricots better in a frangipane tart than fresh ones, or simply be misplaced nostalgia. I once made a living from making asparagus quiche, it’s something very dear to my heart. Still, fresh is good too.
Chocolate Cinnamon Babka
Babka is a rich, yeasted cross between bread and coffee cake with an equally rich Russian and Polish culinary heritage. The name is derived from the Russian baba, which means grandmother, an appropriate name for this wonderful comfort food. While it is mostly known as a popular Jewish bread filled with some combination of chocolate, cinnamon, almonds, even poppy seeds and sometimes topped with streusel, it can also be filled with raisins or soaked with rum, as in baba au rhum. The dough is rich enough that it can also be used for brioche and kugelhopf. In American bakeries, babka is most often formed as a twisted loaf with veins of the sweet filling running throughout, baked either in a loaf pan or freestanding. However, the Israeli version, known as kranz cake, uses a dramatic shaping technique that many of my recipe testers found appealing. This recipe is my favorite version, with both cinnamon and chocolate in the filling. Of course, you can leave out the chocolate and make a cinnamon sugar version, or leave out the cinnamon and make just a chocolate version, but I say, why leave out either? It’s easier to grind the chocolate chips or chunks if they’re frozen. After you grind them, you can add the cinnamon and butter and continue to process them all together. The streusel topping is also optional, but I highly recommend using it on the freestanding versions.
Cinnamon Buns
The simple, sweet enriched dough for these cinnamon buns is very versatile. It can also be used to make to make everything from sticky buns (page 145) and coffee crumb cake (page 150) to fruit-filled thumbprint pastries (page 152). Even though this dough doesn’t contain eggs, it can still make all of these products, and more, but with less work and fewer calories than some of the richer recipes that follow. I wouldn’t exactly call this health food, but anything made with this dough is definitely comfort food to the max! I’ve suggested chopped walnuts or pecans, but feel free to experiment with other nuts. I’ve given you the option of either a cream cheese frosting or a fondant glaze, both of which are delicious and commonly used in pastry shops. The corn syrup in the fondant glaze is optional, but using it will make the glaze smoother. Using milk, rather than water, in the fondant will also make it creamier and softer.
Spicy Oil
Remember that pizza or focaccia is simply dough with something on it, so feel free to experiment with flavorful toppings. Because focaccia is thicker than pizza it often takes longer to bake, so some toppings are better left off until the final few minutes of baking, especially dry cheeses such as parmesan (focaccia baked in round cake pans perform more like pizzas, so they can be fully topped prior to going into the oven). Some ingredients, like fresh pesto or aioli, are even better when added after the pizza or focaccia has finished baking. Most commercial pizza sauces work fine, but if you enjoy making your own, which is quite easy and highly recommended, remember that canned tomato products do not need to be heated up or cooked since they will be cooked on the pizza or focaccia. Cilantro-Jalapeño Sauce
We have Mexico to thank for the tangy flavor combination of cilantro, jalapeño, and lime, although this sauce complements all types of cuisines. Pair it with crispy appetizers like the Chickpea Cakes (page 39) or Indonesian Corn Fritters (page 155), or serve it alongside the Indian Spiced Scrambled Eggs (page 75). Try pouring it over grilled chicken or fish for a zesty finish. Serve this sauce in the first hour after blending, when its color is brightest.
Green Rice
My Iranian father is infamous for knowing how to make one single dish: rice cooked with lentils, dill, and spices. Rice is ubiquitous in Persian cooking, and there are many elaborate variations that include dried fruit, fresh herbs, nuts, and beans. This version is green and aromatic. Dried limes have a distinctly sour, herbal taste specific to Persian food. Whole or powdered dried limes can be found at the stores listed in this book’s Resources section (page 193), but if you can’t find either one, the rice can be cooked with 2 teaspoons of lemon zest and seasoned with 2 tablespoons of lemon juice right before serving.
Cucumber Yogurt
From Greece to India, a variation of this condiment is a standard accompaniment to most meals. It’s a versatile recipe to have in your arsenal, as it lends a light richness to grilled chicken or fish, bean soups, and almost any dish of Mediterranean origin. Try adding a little minced garlic, currants, raisins, fresh dill, or lemon juice. If you can’t find fresh mint, use dried
Apricot Shortcake with Lavender Whipped Cream
Start this recipe the night before serving it so that the lavender can soak in the cream and impart a strong flavor. Use fresh or dried lavender, but stay away from ornamental lavender, which is usually treated with pesticides. If you prefer, substitute peaches or nectarines for the apricots.
