Herb Butter

Use this flavorful compound butter, known in French cuisine as beurre maître d’hôtel, on toasts, to saute vegetables, to toss with pasta-—the possibilities are endless. Vary the herbs as well. For example, try basil, garlic, and Parmigiano-Reggiano for an Italian flavor.

Pecan-Basil Pistou

Pistou is the French version of pesto. As in Italy, it’s used with pasta or dolloped on soups or stews for additional flavoring. Make this sauce when herbs are plentiful, and freeze some for later. I like to freeze it in ice-cube trays; once the cubes are frozen solid, I transfer them to a sealable freezer bag or an airtight container and freeze for up to 1 month. Pine nuts are traditional, and walnuts are a good choice for a delicious hint of bitterness. But pecans give the sauce a rich, buttery flavor. Try it also with other herbs—parsley, cilantro, or even nasturtium leaves for a little spicy kick.

Hot Vanilla Soufflés with Vanilla Ice Cream

This soufflé uses the pastry-cream method as the base. Pastry cream (crème pâtissière) is a very stable custard thickened with flour or cornstarch, and it provides an excellent foundation for dessert soufflés. Vanilla is the bean of a variety of tropical orchid. Use the whole pod if possible to allow the tiny seeds to flavor and speckle the dish. As a substitution, use 1 tablespoon of pure vanilla extract.

When my grandmother became ill with cancer, I thought my heart would break. I never knew anything could hurt so badly—the pain actually seemed to make it impossible to breathe. I was living in New York, working in Connecticut, and would fly home to see her as often as possible, at least every other weekend. When I was home I would make her this soft, rich custard that she loved. The cause of death on Meme’s death certificate is actually starvation, not cancer. The cancer prevented her from swallowing, and the only solution was to feed her through a tube, something no one wanted, or needed, to face. It was a cruel irony for a woman who made so many meals with so much joy and love.

Gazpacho with Tarragon Crème Fraîche

Gazpacho is essentially a liquid salad. It’s best prepared at the height of summer, using fresh, local ingredients—I always use Georgia-grown vegetables when I make this gazpacho. The key is to use the proper amount of salt to draw out the moisture and flavor of the vegetables. There is nothing so simple, yet so vitally essential to cooking, as salt. Without salt even the most elaborate dish would be lifeless and dull. I remember staring incredulously as my chef in culinary school would toss what seemed to be handfuls of salt into food. Now I giggle when my students stare at me when I do the same!

Toasted-Pecan Green Beans

The aroma of the basil when combined with the green beans is vibrant and intoxicating. This dish is almost like a deconstructed pesto without the cheese, or a Southern version of green beans amandine, a once-elegant side dish, that in the 1970s became a sad image of itself, banished to cafeterias and dining halls.

Yukon Gold and Edamame Mash

Edamame is the Japanese word for soybean. Soybeans are somewhat mild in flavor, a cross between a pea and a fava bean. We’re lucky enough to sometimes find them fresh during the summer months, at the farmer’s market or a specialty store, but they are widely available frozen, both in the pod and shelled. Adults and children alike love edamame as a snack. Once the soybeans are cooked or reheated, drain them well, and season with coarse salt or sea salt. Squeeze the seeds directly from the pods into your mouth. Think highbrow boiled peanuts. Edamame may be eaten as a snack or a vegetable, and used in soups or stir-fries. I also like to mash them with potatoes, as in this recipe.

Horseradish Mashed Potatoes

Rich, buttery potatoes are the perfect foil for pungent, spicy, freshly grated horseradish, a fiery cousin to kale, cauliflower, and Brussels sprouts. Although bottled horseradish will do in a pinch, there’s nothing like the bite of the freshly grated root. For spectacular results, serve Pepper-crusted Beef with Cognac and Golden Raisins (page 93) or Braised Short Ribs (page 87) on a bed of this.

Valdosta Grilled Trout with Olive Oil

Several years ago, my girlfriend Becky and I were traveling in the Alps and went through the Saint Bernard Pass from France to Italy, stopping in Valle d’Aosta. We laughed the whole time we were there, as we called it Valdosta, a South Georgia town near the Florida border better known more for pine, pulpwood, and turpentine than Roman ruins and fine cheeses. The first evening, Becky and I went out for dinner, wandering the ancient, winding cobblestone streets looking for a restaurant that seemed inviting. We found one. Thinking of the wooded forests nearby, I ordered rabbit. I should have been thinking of the crystal clear streams of melted snow. Becky ordered trout. They brought it to the table whole, on the bone. The waiter then proceeded to fillet it at the table. When done, he asked if she would like it drizzled with olive oil. It was a revelation. Trout is a very user-friendly fish to grill. Not only does its tough, leathery skin help keep the fish from falling apart, but it also insulates the flesh from the direct heat of the grill. This is the time to break out your best extra-virgin olive oil. The smoky, herb-infused fish just needs a little kiss of liquid gold.

Chicken Saltimbocca with Country Ham

This dish is inspired by a traditional Roman dish made with veal and proscuitto. Translated literally from Italian, saltimbocca means “jump mouth” or “hop in the mouth,” perhaps implying that the dish is so good the flavors jump in your mouth. It’s best to pound your own chicken breasts, for this or any recipe that calls for cutlets, also known in French cooking as paillards. Chicken sold as cutlets in the grocery store aren’t actually pounded, but are horizontally sliced to resemble a cutlet. The meat contracts irregularly in the hot pan, making it tough. When pounding the chicken, I protect it with a heavy-duty freezer bag that I’ve cut apart into two thick sheets. I place the breast between the sheets and pound it with a flat meat pounder or the bottom of a heavy skillet. The idea is to create an evenly thin piece of meat, not to pound it into oblivion. This technique works equally well with turkey, pork, or veal. If necessary, you can substitute white wine or sherry for the Marsala or port. Whatever you do, cook only with what you would drink. Never, ever use anything labeled “cooking wine” or “cooking sherry,” which is full of salt and absolute garbage.

Tarragon Chicken Salad

Chicken salad is one of my all-time favorite dishes. It’s good mounded in a butter lettuce cup or spread between two slices of whole wheat bread. Many recipes call for poached chicken. Years ago, when trying to replicate the famous chicken salad then sold at Zabar’s, the renowned food market on New York’s Upper West Side, I tried roasting the chicken at a low temperature on the bone. When meat, any meat, is cooked on the bone, it is more tender and juicy. I still do not know whether this is how Zabar’s did it, but it is delicious and wonderfully simple.

Provençal Lamb Chops

Lamb rib chops have a dandy handle (the rib bone), and are excellent served as lamb “lollipops” for delicious, but rather extravagant, hors d’oeuvres. As the ribs get closer to the neck and shoulder, the nugget of meat becomes smaller, perfect for hors d’oeuvres. The larger ones are best as a main course served with a knife and a fork. Loin lamb chops are cut from the loin and look more like miniature T-bone steaks, with a bit of the loin and tenderloin on either side, and take a little longer to cook, but may be substituted in this recipe.

Herb-Crusted Fresh Ham

Mama and I now share the cooking at the holidays. I usually prepare the main courses, we share the side dishes, and she prepares the desserts. This ham is an Easter favorite. You may be surprised to see lavender listed as an ingredient in this herb crust. Although very commonly found in desserts, lavender—especially sweet English lavender—is an incredibly versatile herb for savory cooking. Be sure to use only pesticide-free, food-grade leaves and blossoms from an organic farmer’s market or online; lavender from florists, spas, or home décor shops are probably not appropriate to eat. The key to cooking with lavender is to start out with a small amount of flowers, and add more as you go. A little amount of the sweet, perfumed herb is wonderful, but adding too much lavender to your recipe is much like eating a bar of soap. A little goes a long way.

Goat-Cheese Gratin with Tarragon Toast

Hot, bubbly cheese, buttery toast, and fresh snipped herbs are a captivating combination for a first course. Serve this in individual dishes for a more elegant presentation. In the summer, it is incredible with chopped fresh tomato. In the winter it takes on a completely different taste and feel topped with your favorite tomato sauce. Compound butters (see page 281) are flavored with herbs or spices. This recipe features tarragon butter, which is a classic French combination that makes this simple recipe taste spectacular. The flavoring possibilities for compound butters are vast: I once worked with a cowboy chef who made a compound butter for steak with freshly chopped cilantro, fresh lime juice, and finely chopped jalapeño. Mix it up!

Tarragon Tomato Salad

Here is my version of a recipe taught by Anne Willan. Her version uses small cherry tomatoes, which are scored, blanched, and peeled. The combination is incredible, as the peeled tomatoes soak up the flavorful vinaigrette and explode in your mouth. However, the number of people I would peel cherry tomatoes for is fairly limited. The wine may seem a little surprising, but tomatoes contain alcohol-soluble flavors that can only be delivered to your taste receptors in the presence of alcohol. As the salad marinates, the tomatoes begin to exude their juices, so don’t make this more than 2 or 3 hours before serving. Serve this pretty combination in a butterhead lettuce cup with plenty of bread to soak up the juices.

Herb Garden Salad

Alain Passard is the chef-owner of the Parisian restaurant L’Arpège, awarded three Michelin stars, the highest possible rating from the most prestigious organization. He caused quite a stir when he “went vegetarian,” as he had come from the classic French tradition of cooking with meat stocks. This salad is inspired by a dish he created when he entered his veggie phase. This is well suited for cooks who grow their own herbs or are able to purchase good quality fresh herbs from their farmer’s market—otherwise, it can be somewhat costly at a traditional grocery store. Rinse the herbs under cold running water, then spin them dry in a salad spinner. Carefully remove the leaves from the stems (don’t cheat: use only the leaves, discard the stems). Use more herbs than lettuce. Nasturtiums (both leaves and flowers), cilantro, basil, and chervil are other herb suggestions.

Belgian Endive with Gold Coast Shrimp Salad

We sometimes vacation at Jekyll and St. Simons Islands, part of a region that Georgians call the “Golden Isles” or “Gold Coast.” For many years, it was the vacation retreat of very wealthy families from the Northeast. But it was another sort of gold that inspired the name: according to a local historian, it was named centuries ago by the first settlers, who were dazzled by the golden glow of the marshes at dusk. These marshes, the clear estuaries, and the surrounding waters are also home to sweet wild Atlantic shrimp. With the endive leaves arranged in concentric circles on a platter, this is an especially attractive addition to the buffet table.

Pimento Cheese in Cherry Tomatoes

The “pâté of the South,” pimento cheese is the epitome of a summer picnic delight. Everyone has a slightly different recipe, but the primary ingredients remain the same. Don’t be tempted to buy grated cheese, because the end result won’t be creamy enough. Try this stuffed in tomatoes, slathered on a celery stick, or (one of my favorites) straight from the bowl on a spoon.

Thyme Toasted Pecans

Southerners always seem to have candied and spiced pecans around to nibble on during the holidays. My grandmother always made sweet pecans crusted with egg whites and sugar, using the nuts she and my grandfather had collected in the fall. So this version, with extra-virgin olive oil and herbs, is a real departure for my family. Recipes such as this, with a short ingredients list, are completely determined by the quality of the ingredients. The shorter the list, the better the ingredients must be. Pecans are the star, but the choice of olive oil and salt is crucial to the success of the dish. Use the finest possible. This recipe is splendidly simple, just perfect with apéritifs and for cocktail parties.

Poached Pears in Cinnamon-Spice Sauce

These poached pears are especially luscious with their Pacific Rim accent. Locally grown, in-season, organic pears are far superior for this slow-cooked dessert than store-bought fruit shipped from far away.
