Spicy Potato Samosas
Bite into a freshly fried samosa, and you’ll realize that the quintessential Indian snack is no simple food. When made well, the crisp shell is delicately rich and flaky. The filling inside varies, but a tangy potato mixture is the most common. Many believe that samosas arrived in India via the ancient trade routes that linked West Asia with Central Asia and South Asia. In fact, related pastries are called sanbusak in the Middle East and samsa in Central Asia. Samosas are fabulous alone or with a dab of mint and/or tamarind chutney. Add some chai tea, and you have a perfect snack. Or serve them with a salad for a great lunch. Many cooks use russet (baking) potatoes, but I prefer Yukon Golds for their flavor and cheery yellow color. Choose potatoes of the same size to ensure that they’re done at the same time.
Creamy Broccoli and Potato Soup
A lot of people have only had a close-up encounter with broccoli as raw crudités or boiled until it’s gray and limp, which is unappetizing and often difficult to digest. Here, sautéing the broccoli in olive oil, infusing it with broth, and then blending releases all of its sweetness and cancer-fighting properties and helps everything go down nice and easy.
Summer’s Best Zucchini Soup
I like the way nature balances her books. In summertime, everyone gets hot and loses water. So what does Mother Nature do? She produces an abundance of summer squash, which happens to be full of water, making it an ideal vegetable to combat dehydration. I think of zucchini as the perfect party guest. It’s mild and mixes well with a crowd. The key with zucchini is good prep, so that the flesh stays somewhat firm and tasty.

Though this soup is low in fat, the buttery flavor of Yukon Gold potatoes makes it taste rich and luscious. Roasted garlic and red peppers add a deep, smoky flavor.
Garlic Mashed Potatoes
This is our go-to side dish for any and every recipe that gives you good gravy. Yukon Gold potatoes make a nice sweet, creamy mash. Try it with Bobby’s Turkey Vegetable Goulash (page 132) or Baked Chicken with Zucchini and Herbs (page 37).

“I’ll Never Go Hungary Again” Goulash
This Hungarian-style dish reminds us of learning to cook on our own while in college. The term “goulash” is very loose in its definition as it was a dish invented for using leftovers—or in our case, whatever we could find in the kitchen! Sandy, in particular, has fond memories of goulash. She was the last of the four Pollock sisters to leave home. Lucky for Sandy, her sister Yvette lived nearby. While Sandy was living with her parents and attending college, Yvette was a young schoolteacher, just getting started in her career. Yvette didn’t have a lot of money, but she was always generous and creative. From time to time, she would invite Sandy and her parents over for goulash, asking, “Oh, would you mind bringing over a can of corn from the house? And could you grab some cheese? And some beef? Oh, and an onion?” It turned out that her goulash was composed of whatever the Pollocks had in their fridge or pantry at the time. But Yvette would always set the table for the family and turn the borrowed ingredients into the most delicious meal.
Loosey-Goosey Garlic Mashers
I love me a mashed potato. Add a few cloves of garlic into the mix and you have lovely garlic mashers! Or for something really special, I substitute celery root for some of the potatoes. Celery root is my mother’s favorite vegetable, but in our little town in upstate New York it’s not always easy to find. One year for Christmas I got a huge bag of celery root and put it under the tree for her. She says it was the best Christmas present she ever got! If you haven’t tried celery root before, you’re missing out—it’s a big, craggy, knobby thing, it smells like celery, is slightly sweet, and has a wonderfully starchy texture kind of like a potato.
Potato, Prosciutto & Fontina Cake
I’m a huge fan of potatoes! Which is why I love this dish. It’s the perfect base for poached eggs at brunch, to sop up the juices of a big rib eye steak (page 156), to complement my fabulous brined pork chops (page 170), or just for lunch. When this was on the menu at my restaurant and I was craving something porky, cheesy, and delicious, I’d have one of the line cooks fry up one of these lovelies for me to eat while I worked. Yum!
Whole Roasted Fish with Sliced Potatoes, Olives & Herbs
Making a whole fish is so cinchy that it’s almost not fair. It looks like you’ve put so much time and effort into it, and it’s so elegant and beautiful on a serving platter, but really, all you have to do is jam a fish full of herbs and lemon and toss it in the oven until its eyeball pops out! I think this is the coolest part—Mother Nature’s own pop-up timer—I bet that’s how they invented the pop-up turkey timer!

This composed warm potato salad came together as a dish for my father. It has all the salty, tart flavors that he loves.
Roasted Garlic Mashed Potatoes
I’ve never met anyone who doesn’t like mashed potatoes, an all-American dish that is nostalgic and satisfying. Yukon Gold potatoes have a buttery aroma and a rich, creamy flavor, while roasted garlic adds a sweet flavor that is less aggressive than that of raw garlic. These are great with Pan-Roasted Half Boneless Chicken with Sautéed Escarole (page 140).
Mahogany Black Cod with Whipped Parsnips, Baby Bok Choy, and Mustard Sauce
Beautiful plump fish covered with a butterscotch-colored sauce on a bed of snow-white puree, this is a very subtle dish, in a good way. The ratio of honey to mustard to soy sauce is perfect: you get sweet and salty with a little bite to complement the mild fish. The whipped parsnips are smooth and just rich enough with butter and cream. Bok choy makes a crisp accompaniment.
Grilled Wild Salmon Steak with Fennel Hash and Sweet Onion Sauce
Salmon steaks are shaped sort of like a horseshoe and have the bone left in the center. They’re really thick and meaty and don’t stick like fillets, which means they’re perfect for the grill. Wild salmon is preferable to that raised in fish farms, as it tends to be healthier for you and taste better. Be sure to remove all the little pin bones with a pair of tweezers or have your fish guy do it. With the bounty of produce on the planet, I gotta say onions are probably my favorite vegetable. They can be transformed in so many different ways. This onion sauce is so velvety you’d swear there is butter in it. The trick is to cook the onions low and slow so they don’t brown or caramelize. This fennel hash is also killer with steak or eggs in the morning.
Colcannon with Scallions and Greens
Colcannon is a traditional Irish dish of boiled potatoes mashed with green onions, leeks or sometimes chives, kale or cabbage, and milk or cream. I like mine extremely green, with lots of black pepper.
