Palets de Pommes de Terre

Although potato pancakes (or latkes) go by many names in France—palets de pommes de terre, pommes dauphines, the Alsatian grumbeerkischle, and matafans, a mashed-potato latke typical of Savoie—a latke by any other name is still a latke. In Poland, these egg-free latkes are made with older potatoes, whose increased starch helps bind them together. You can just dress the traditional latke with a dollop of applesauce, or you can try a variation made with apples and sugar.

Alsatian Choucroute

One-Dish Sabbath meals like choucroute and pot-au-feu are for Alsatians what cholent is for Jews from eastern Europe. In the nineteenth century, the author Alexandre Weill mentioned the Sabbath lunch meal of his childhood, which included a dish of pearl barley or beans, choucroute, and kugel, made with mostly dried pear or plum. Choucroute with sausage and corned beef is also eaten at Purim and has particular significance. The way the sausage “hangs” in Alsatian butcher shops is a reminder of how the evil Haman, who wanted to kill all the Jews, was hanged. Sometimes Alsatians call the fat hunk of corned or smoked beef “the Haman.” Michèle Weil, a doctor in Strasbourg, makes sauerkraut on Friday, lets it cool, and just reheats it for Saturday lunch. She varies her meal by adding pickelfleisch, duck confit, chicken or veal sausages, and sometimes smoked goose breast. You can make this dish as I have suggested, or vary the amounts and kinds of meats. Choucroute is a great winter party dish; the French will often eat it while watching rugby games on television. When you include the corned beef, you can most certainly feed a whole crowd.

Roasted Potatoes with Bell Peppers and Onions

This is a perfect accompaniment to Shake-and-Bake Tofu (page 138), since they both bake at 425°. This needs more time in the oven, so start it first. Complete the meal with a simple salad or coleslaw.

Soy Scalloped Potatoes

Here’s a deceptively rich-tasting version of scalloped potatoes. It gives you the benefits of soy, minus the bother of making a flour-thickened white sauce.

Leek and Red Pepper Hash Brown Potatoes

If you like leeks, you’re sure to enjoy this dressed-up version of hash browns. Use firm-textured potatoes, such as red-skinned or Yukon gold, rather than mealy ones, for best results. Serve with sautéed soy “sausage,” allowing 2 links per serving, and a salad of mixed baby greens with tomatoes and carrots.

Puree of Carrot Soup

Mild and light, this is a good introduction to nearly any kind of meal. Use sweet, fresh carrots that aren’t the least bitter. Organically grown carrots are a good bet for optimal flavor.

Lamb Curry

For me, commercially produced curry power tastes just that: commercial. You would never find prepared curry powder in an Indian restaurant, and because the spices are combined fresh, the flavors are robust and explosive. If you like a light curry flavor, use half the spice mix. If you like a spicy curry—use it all. I won’t be mad at ya. Serve the lamb curry with Perfect Steamed Jasmine Rice (page 240) or basmati rice. This is Bombay the right way.

New England Clam Chowder

Good clam chowder starts with really good, fresh clams. It’s easy to find them if you live on the coast, but even if you’re landlocked in Ohio, you can ask the guy in the seafood department to order them. I use both cherrystones, which are large and meaty, plus smaller littlenecks, which are more delicate and should be cooked only briefly. I don’t care for bottled clam juice because of its high sodium content.

Three-Greens Soup with Spinach Gremolata

To save yourself some chopping, look for bags of mixed, pre-cut braising greens, available at some supermarkets. (Buy spinach separately for the gremolata.) Serve with warm bread for a filling main course.

Yukon Gold Potato and Jerusalem Artichoke Latkes with Apple-Horseradish Mayonnaise and Taramasalata

Chef Todd Aarons of Tierra Sur at Herzog Wine Cellars in Oxnard, California, shared this recipe as part of a Hanukkah cocktail party menu he created exclusively for Epicurious. These potato and Jerusalem artichoke latkes fry up quickly and are best served immediately, but if necessary, they can be held briefly in a warm oven. If you can't find Jerusalem artichokes—also known as sunchokes—Aarons recommends substituting parsnips or celery root.

Golden Scalloped Potatoes

Think of this as a streamlined and guilt-free version of scalloped potatoes. It's a toss-and-dump dish, in which I toss sliced potatoes with a little melted butter, dump them in a dish, then cover them with milk—healthier than heavy cream—that I've thickened slightly with a bit of flour (the flour keeps the milk from separating). The cheese topping is optional; with or without it, in less than an hour you will be rewarded with lusciously creamy potatoes along with that all-important browned crust.
