Ingredients

1 small shallot, finely chopped
3 tablespoons olive oil
2 tablespoons Sherry vinegar
Kosher salt, freshly ground pepper
3 celery stalks, shaved with a mandoline or very thinly sliced, plus 1/4 cup celery leaves
1 small bunch arugula, stems trimmed, leaves torn
2 tablespoons chopped pitted green olives
2 tablespoons grated Pecorino or Parmesan (optional)

Preparation

  1. Whisk together shallot, oil, and vinegar in a large bowl; season with salt and pepper. Add celery stalks and leaves and arugula; toss to coat. Garnish with olives and cheese, if desired.
