Sweet potatoes are extremely nutritious and provide a great source of beta-carotene. They can be kept in a bowl at room temperature for days, and then cooked very quickly when a vegetable is needed with many of your meat dishes. For variety, you can add a sprinkling of cinnamon, nutmeg, or even freshly ground black pepper.

Ingredients

1 small sweet potato, scrubbed
1 tablespoon butter, at room temperature
Light sprinkle of salt

Preparation

  1. Jab the sweet potato a few times with the tines of a fork. Wrap in a paper towel and cook in a microwave oven at full power until soft, 4 to 5 minutes. Remove to a plate, cut open lengthwise, add the butter and salt, and enjoy while still hot.
