Ingredients

Pudding

1 (6-ounce) box instant vanilla pudding
1 (7 ¼-ounce) box vanilla wafers
4 bananas, sliced

Meringue

¼ teaspoon salt
3 egg whites, room temperature
½ teaspoon vanilla extract
½ teaspoon almond extract (optional)
6 tablespoons sugar

Preparation

  1. Step 1

    Preheat the oven to 375°F. Make the pudding according to the directions on the box. Arrange the wafers, sliced bananas, and pudding in layers in a 2-quart casserole, ending with a layer of pudding on top. This will make 3 layers.

    Step 2

    Add the salt, vanilla extract, and almond extract (if using) to the egg whites and beat until stiff while gradually streaming in the sugar. Spread the meringue gently over the top of pudding. Bake for 15 minutes.
