Garlicky Black Beans

Black beans are delicious with lots of garlic. This is one of my favorite ways to serve them.

Ingredients

1 tablespoon extra-virgin olive oil
4 garlic cloves, minced
Two 16-ounce cans black beans, drained and rinsed, or 4 cups cooked black beans (from about 1 2/3 cups raw)
Juice of 1/2 to 1 lemon, or to taste
1/4 cup minced fresh cilantro or parsley

Preparation

  1. Step 1

    Heat the oil in a large saucepan. Add the garlic and sauté over low heat until golden, 1 or 2 minutes.

    Step 2

    Add the beans, 1/2 cup water, and the lemon juice. Cook over medium heat until the mixture comes to a gentle simmer.

    Step 3

    Remove about 3/4 cup of the beans, mash them, and return to the saucepan. Simmer very gently for another 5 minutes. Stir in the cilantro, and serve.
