Limonada is most often translated as “lemonade,” but limes are the best approximation of the Colombian citrus that stars alongside coconut in this barely sweet smoothie. Be sure to pick up unsweetened coconut milk, not cream of coconut, and shake or stir the milk well to incorporate the coconut liquid and cream before measuring.

    Serves 4–6

Ingredients

1 1/2 cups unsweetened coconut milk
3/4 cup freshly squeezed lime juice (from about 10 limes)
6 tablespoons granulated sugar
3 cups ice cubes

Preparation

  1. In a blender, combine all the ingredients. Blend until fully liquid. If the mixture is too thick to pour, add up to 1/3 cup cold water and blend. Serve immediately with straws.
