Melon-Berry Kebabs

Attractive, fragrant, and so tasty, these kebabs are a great way to fit more servings of fruit into your diet.

Ingredients

2 tablespoons fresh lemon juice
1/2 teaspoon grated lemon zest
1 tablespoon sugar
1 1/2 teaspoons grated peeled gingerroot
2 tablespoons chopped fresh mint
12 1-inch watermelon or honeydew cubes
8 whole strawberries, hulled

Preparation

  1. Step 1

    In a small microwaveable bowl, microwave the lemon juice on 100 percent power (high) for 15 seconds, or until hot. Stir in the lemon zest, sugar, and gingerroot. Set aside to cool.

    Step 2

    Stir the mint into the lemon juice mixture. Using the back of a spoon, mash the mint to release the flavor. Pour into a pie pan.

    Step 3

    Add the melon and strawberries to the lemon juice mixture, gently stirring to coat.

    Step 4

    Using 3 melon cubes and 2 strawberries per skewer, alternate the fruit as you thread it onto four 6-inch wooden skewers.

    You may want to add a whole mint leaf at the base of each kebab. The dark green leaves provide a nice color contrast and keep your fingers from touching the sticky fruit.
