Cooks' Note

A seasoned soy sauce mixture gives this simple dish a teriyaki-like taste. We like the added flavor lent by outdoor grilling, but broiling will allow you to enjoy the chicken in more inclement weather.

Ingredients

1/2 teaspoon onion powder
1/2 teaspoon garlic salt
2 tablespoons finely chopped flat-leaf parsley
4 large skinless chicken breasts
1 cup soy sauce
Juice of 1 lemon

Preparation

  1. Sprinkle the onion powder, garlic salt, and parsley on the chicken breasts and put them into a plastic storage bag. Add the soy sauce and lemon juice. Squeeze out excess air, seal tightly, and massage to work the marinade into the chicken. Place in the refrigerator and marinate for 4 to 6 hours. Set up a grill or preheat a broiler. Remove the chicken from the marinade and grill or broil for at least 6 minutes a side until the breasts are cooked through.
