Pineaple-Kiwi Salsa

Sweet and spicy, this fruit salsa is a refreshing accompaniment to grilled chicken, pork, fish, or shrimp. It is also great as a quick, healthy snack when served on apple or pear slices or warm whole-wheat pita triangles.

Ingredients

3/4 cup finely chopped fresh pineapple
2 medium kiwifruit, peeled and chopped
2 medium strawberries, hulled and chopped
3 tablespoons snipped fresh cilantro
2 tablespoons chopped red onion
1/2 to 1 medium fresh jalapeño, seeds and ribs discarded, minced
1 teaspoon grated lime zest
1 tablespoon fresh lime juice
1 teaspoon snipped fresh mint
1/2 teaspoon honey

Preparation

  1. Step 1

    In a medium bowl, gently stir together all the ingredients. Let stand at room temperature for 10 to 15 minutes before serving so the flavors blend. Cover any leftovers and refrigerate for use the next day.
