Red Radish, Red Apple, and Red Onion Salad

Ingredients

6 radishes, thinly sliced
1 red-skinned apple, your favorite variety, quartered, cored, and thinly sliced
2 teaspoons fresh lemon juice or a wedge of fresh lemon
1/2 red onion, thinly sliced
1 head red romaine lettuce or red leaf lettuce, chopped

Dill and Poppy Seed Dressing

3 tablespoons red wine vinegar
2 teaspoons honey (a drizzle)
1 teaspoon salt
1/4 cup extra-virgin olive oil (EVOO)
1/2 cup sour cream
1 teaspoon poppy seeds
2 tablespoons chopped fresh dill or 2 teaspoons dried

Preparation

  1. In a large bowl combine the radishes, apple (coated in the lemon juice to retard browning), and onion with the chopped lettuce. In a small bowl, combine the vinegar with the honey and salt. Whisk in the EVOO. Stir in the sour cream, poppy seeds, and dill. Pour the dressing evenly over the salad, toss, and serve.
