Sausages with Kale and White Beans

GOOD TO KNOW Fiber-rich beans and leafy greens offset the richness of sausages in this Italian-inspired dinner. Broiling makes quick work of cooking the sausages. For an even lighter preparation, substitute chicken or turkey sausages for the pork.

Ingredients

1 1/2 pounds sweet Italian sausages (about 8 links)
2 tablespoons olive oil
1 large bunch kale (1 1/4 to 1 1/2 pounds), thick stems removed, leaves coarsely chopped
4 garlic cloves, thinly sliced
1/2 cup water
Coarse salt and ground pepper
1 can (15.5 ounces) cannellini beans, rinsed and drained
2 tablespoons white-wine vinegar

Preparation

  1. Step 1

    Heat broiler, with rack 4 inches from heat. With a fork, pierce sausages all over; place on a rimmed baking sheet. Broil, turning occasionally, until browned and cooked through, 8 to 10 minutes.

    Step 2

    Meanwhile, heat oil in a large skillet over medium-high. Add kale, garlic, and the water; season with salt and pepper. Cover and cook, tossing occasionally, until kale is wilted and tender, 10 to 12 minutes. Add beans and vinegar; cook, tossing gently, until beans are heated through, about 2 minutes.

    Step 3

    Slice sausages and serve over kale and beans.
