Make Ahead

Chocolate Souffles

These soufflés may be made several hours in advance and kept in a refrigerator until just before baking. If refrigerated, bake an additional 2 to 3 minutes. Alternatively, the soufflés may rest at room temperature for up to 1/2 hour before baking with no effect on cooking time.

Windmill Cookies

"A friend gave me this great cookie recipe from the Netherlands," writes Marie Rizzio of Traverse City, Michigan. "The dough can be made ahead and frozen."

Cardamom Crème Brûlée

Just a few short years ago, crème brûlée was found only in four-star French retaurants. Now almost everybody makes one using a favorite and often exotic flavoring. This ice-cold custard with the crackling sugar top is the most popular dessert at my restaurant. So much so that I sometimes think it is the only dessert I should make. Perhaps it is the ease of preparation that makes me think so!

Applesauce Spice Tea Cake

Whether you use store-bought applesauce or make your own, this lovely, moist cake will make it hard to stop after one piece. It's very important to beat the eggs and sugar until they are thick, as this, along with the baking powder, is what gets the cake to rise nicely. This cake makes a great gift — it can be made ahead, cooled, glazed, then frozen.

German Apple Cake (Versunkener Apfelkuchen)

This is one of the many types of apple cake popular throughout central Europe. I have seen apple cakes, a traditional Rosh Hashannah dessert, served on Sabbath and holiday tables from Israel to Australia.

Pastel de Tres Leches

Pastel de tres leches is a traditional Nicaraguan Celebration Cake usually reserved for the holiday season. In this recipe we preserve the traditional presentation, and add some typical American holiday flavors. The cake is composed of four components: Sponge Cake, Rum Milk Syrup, Meringue, and Cranberry Compote.

Prune and Walnut Crecents

These pastries are best when freshly baked, so if you plan on giving them to someone who may not be able to serve them within a day or two, you should deliver them frozen, along with the baking instructions.

Toasted Almond Cream Pie with Boysenberry Topping

Developed in 1923, the boysenberry is a hybrid of the blackberry, raspberry and loganberry.

Smoked Rib-Eye and Goat Cheese Empañadas

This is a terrific make-ahead appetizer. The steak must be coated with the spice rub and chilled overnight before grilling, then the empanadas can be assembled completely one day before baking.

Roasted Shallot and Tarragon Pesto

This condiment can be tossed with asparagus and potatoes for an easy salad, dolloped onto scrambled eggs, or spread on bruschetta.

Oatmeal Praline Ice Cream with Warm Berry Sauce

For a quick and easy version, just stir one cup of praline into a one-quart tub of vanilla ice cream that has been softened slightly.
