Cream of Artichoke and Jerusalem Artichoke Soup
This recipe calls for both "true" artichokes — known botanically as globe artichokes — and Jerusalem artichokes, which are actually an unrelated root vegetable (sometimes called Sun Chokes). In the soup, the Jerusalem artichokes enhance the flavor of the leafed variety.

Chili and Sage-Rubbed Salmon
Union Square Cafe guests are constantly challenging us to serve salmon in new and different guises, and here's one of the most popular ones we've done to date. Salmon is rich and meaty enough to stand up to the assertive chili rub; the trick to this dish is to cook the salmon gently enough to prevent the spices from burning. At the restaurant, we use New Mexico chili powder, which we prize for its fruity, smoky aroma and mild heat level. Buy it if you see it.

These sandwiches make a savory lunch or, served with a bowl of soup, a perfect Sunday supper. We prefer Madras curry powder for this recipe because its subtle, sweet flavor complements the apple and cheese particularly well.

Pork Chops and Applesauce
The predicaments of six kids growing up under one suburban roof were the cornerstone of each Brady Bunch episode. In "The Personality Kid," which first aired in 1971, Peter thinks he's dull and goes looking for a new image. Trying on Humphrey Bogart for size, he asks Alice what's for dinner. "Pork chops and applesauce," Peter repeats à la Bogart. "Ain't that swell." His parents and Alice make lighthearted fun of Peter's new accent.

Braised Greek Chicken and Artichokes
