Salmon Croquettes
I grew up on these tasty little fried cakes, which Granny Foster used to serve for breakfast with fried eggs and biscuits, or sometimes for supper along with mashed potatoes and coleslaw. Like most Southerners, Granny used canned salmon in her croquettes. I opt instead for freshly poached or grilled salmon, a move that allows the delicate, grassy flavor of the fish to come through. Crispy and satisfying (the name croquette comes from the French for “to crunch”), these easy treats are an excellent way to revitalize leftovers from last night’s salmon dinner, ensuring that the switch from canned to fresh fish does not necessarily sacrifice convenience.
Sautéed Flounder with Garden Vegetable Ratatouille
I like to make this in early summer, when the first summer vegetables are coming in and the flounder, which can grow to as much as twenty-five pounds, are running small—what our fishmonger calls “plate size.” They are so fresh and dainty at that time of year that I usually budget one whole fish per person. I sometimes serve this simple dish with a green salad or fluffy steamed rice, but you don’t have to, as it’s really a complete meal in and of itself—the vegetable ratatouille, made with smaller-than-usual dice, doubles as both a sauce and a vegetable side.
Grilled Grouper with Heirloom Tomato Salsa
Last time I was at the SeeWee, an old-school seafood restaurant outside Charleston, I had an incredibly good plate of grilled grouper with fresh tomato salsa. Not only was the fish superfresh and perfectly cooked, but the salsa, a rough mix of vine-ripe tomatoes, white onion, and cilantro, was so simple and bright that it enhanced the flavor of the fish perfectly without overpowering it. I was so fond of it that I’ve been re-creating it at home ever since. It’s just the sort of light, fresh supper you want in the dead of summer.
Louisiana BBQ Shrimp
Despite its name, this traditional shrimp dish isn’t so much barbecue as a savory, saucy stew. It gets its full-bodied flavor from Worcestershire sauce and dark beer, and a dose of fresh lemon gives it a bright, clean finish.
Fried Green Tomato BLT
Fried green tomatoes are one of those Southern classics that inspire fanatical devotion. For good reason: green tomatoes have a lovely tart flavor that mellows and warms in the heat of the frying pan, and, because they are so firm, they keep their shape and texture even after they’re cooked. They are most often eaten on their own, as a side dish, so it wasn’t until I visited a small grocery store in Greenwood, Mississippi, that I tried a fried green tomato BLT for the first time. It immediately struck me as such an obvious combination that I couldn’t believe I hadn’t already thought of it myself.
Carolina Shrimp Chowder
Every summer when the Carolina shrimp are in season, Nana’s, which is one of my favorite restaurants in Durham, makes a delicious shrimp chowder that is the inspiration for this light and succulent soup. Nana’s version is rich and creamy—closer to a traditional potato chowder—but because I love the sweetness of the corn and shrimp together, I make mine thinner, more like a corn chowder. To give this dish extra oomph, I add the shrimp at the very end, so they are tender and extra sweet, and top with Crispy Fried Oysters Four Ways (page 117).
Ham Bone Soup
A few years ago, at Easter, in addition to the usual spread of ham and sides, I made a gratin of white beans, country ham, and collards from Frank Stitt’s very fine Southern Table cookbook. That dish, which everyone raved about, and the leftover ham bone—a prized ingredient that should never, ever be put to waste—inspired this low-on-the-hog soup.
Minted Sweet Tea
When Southerners say “tea,” they mean basic black—as in Lipton or Tetley, not English Breakfast or Earl Grey—iced and sweet. It is the ubiquitous, unofficial drink of the South.
Meyer Lemonade
The delicate, orange like flavor of Meyer lemons is what sets this mellow lemonade apart. For a cocktail version, spike the punch bowl with a glug or two of Jack Daniel’s.
Herb Deviled Eggs
With their outsize flavor and perfectly bite-size proportions, deviled eggs never go out of style. The best part is that they’re one of the few dishes fit for entertaining that’s also so simple, you can probably throw them together on a moment’s notice without even going to the grocery store. All you need are some eggs and a little something to give them zip, from chopped pickles or pickle relish to cayenne pepper or spicy pepper relish. I like this version, which is topped with fresh herbs and cornichons or other pickled vegetables, like okra or asparagus.
Red Rice, Green Rice
Can you tell I love rice? I can’t say which one of these recipes I prefer—the spicy, tomatoey red rice or the poblano and herb flavors in the green rice variation. They are both full of flavor and complement countless dishes. Serve either one with Jalapeño-roast Pork (p. 269), and your favorite spicy black beans or grilled fish, chicken, or shrimp.
Shiitake Mushroom Sauté with Asian Flavors
This is a tasty little combination that can be used on top of or alongside any Asian-inspired meat or fish entrée or mixed with shrimp or crabmeat to make a light and tangy starter. I love it with tuna, brushed with a little hoisin sauce, or with medallions of pork tenderloin.
Smothered Greens with Smoked Onions
We first developed this recipe as a side for a vegetarian dish we were serving at Bayona. We wanted to create the traditional smoky pork flavor of southern greens without using pork. That’s when we thought about smoking the onions. The smokiness imparts a tremendously satisfying and “meaty” flavor, but if you want to prepare this dish in the real southern way, don’t hesitate to throw some bacon, ham, or salt pork in the pot. Also, we tend to cook ours a little drier (mainly for presentation, so it plates up neater), so if you want more pot liquor, add more water early on.
Five-bean Picnic Salad
If you’re going to buy and chop up all the vegetables for this salad, you might as well make a big batch that will last you a few days. This colorful, incredibly satisfying combination keeps well and makes for a terrific side dish to just about anything you care to sauté, fry, or grill. And because this salad feeds a crowd, it’s perfect for picnics and backyard barbecues.
Smoked Vegetables
Though we have a cabinet-style smoker at the restaurant, you can do the same thing at home with a domed barbecue grill or smoker. Get your chips going, then fill the drip pan with ice. Lay the veggies out on the grill, close the cover, and let it smoke. The smaller vegetables like mushrooms need less time. Check them periodically and take them off when they look and smell ready.
Sautéed Sweetbreads with Sherry—Mustard Butter
This recipe will not be for everyone—gland lovers only! Chef Daniel taught me how to prepare sweetbreads many years ago (his technique follows), and I have been serving them ever since. Of all the offals, it is the most appealing to me, because of its mild flavor and creamy texture. This particular preparation is my mom’s favorite dish, so it will never go off the menu. One of the most challenging parts of preparing sweetbreads is finding a place to buy them. You will probably have to special order them from your market’s meat department, but once you have them, then the real fun begins! Turkish Stuffed Eggplant with Spicy Lamb and Rice
Aaaaahhh, Mediterranean comfort food! Think of this as a heady, warmly spiced alternative to your mom’s stuffed bell pepper. The baked eggplant flesh becomes a tender bed for the luscious meat and rice filling, and the whole is so succulent and moist that no sauce is needed. Some chilled sliced cucumber and onion with olive oil and vinegar would be a good starter or side dish.
