Warm Pasta Salad with Roasted Corn and Poblanos
Pan-roasting or toasting in a dry cast-iron skillet is a cooking technique used often in Mexican cuisine. We use it here to bring up the flavors of corn, onion, and pumpkin seeds. We created this salad as a main course, but it's also a terrific side dish.

Orientalish Pasta Salad
Gaze at rings on your left hand. Remember how, when you were single in New York and men made rude remarks to you on the street, you'd dream about the day your boyfriend would put an engagement ring on your finger. Those trips with your friend, Megan, to Tiffany's—how the diamonds sparkled under glass. And so, my friend, it comes to this: Orientalish pasta salad for the kabillionth time.

Pasta Salad with Shrimp, Roasted Peppers, and Fennel
"I run a salon, and I’m an instructor at a cooking school," writes Sandy Ercolano of Ridgewood, New Jersey. "It seems that I’m always in the kitchen. At home I cook meals and come up with recipes for my classes. Of course, my family eagerly tries anything I make."
To turn this main-course salad into a side dish or vegetarian entrée, omit the shrimp.
Orzo with Everything
A suitably named pasta salad that's loaded with flavorful ingredients. Try it with grilled veal chops or Cornish game hens.

Mediterranean Pasta Salad with Olives and Capers
Mary deMuth of Rowlett, Texas, writes: "Because my husband is in a graduate program, we've been able to meet people from all over the world. It has been a great experience for our three children — and a chance for me to add to my recipe collection. We frequently have other students over for dinner, so I'm always learning new dishes. Next year our family will be moving to southern France, and we're very excited about the food we'll have there. We hope to make many new friends who will share their Provençal specialties."
This side dish is a perfect contribution to any potluck picnic. Toss in a can of drained tuna for a more substantial salad.
