Pumpkin-Pecan Pie with Whiskey Butter Sauce
This dessert was inspired by my good friend and great Cajun chef Paul Prudhomme. He prepares his with sweet potatoes, which are available year-round, and hence, give his version a longer seasonal shelf life than mine. If there's anything better than pumpkin pie or pecan pie, it's the two of them together. The whiskey butter adds a thoroughly Cajun twist to this sweet ending.
The Only Marinade You'll Ever Need
If I could use only one marinade for the rest of my life, it would be this one. Redolent with garlic, piquant with fresh lemon juice, and fragrant with extra virgin olive oil, it instantly transports you to the Mediterranean. I can't think of a single food that doesn't taste better bathed in it. You can use it as both a marinade and a basting sauce. If marinating poultry, meat, or seafood, simply set a portion aside for basting.
Chocolate-Chip Ice-Cream-Sandwich Cake with Butterscotch Sauce
Here's a party-size ice cream sandwich that everyone will love. We use two 9-inch-diameter cake pans so that the cookies keep their round shape when baking. And there's no need for last-minute fuss; this can be made up to three days ahead.

Aïoli
This sauce evokes Provence at its productive best, in summer, when farms and family gardens are at their peak production, yielding vegetables with an incomparable depth of flavor.
Note: be sure all of your ingredients, and the bowl or mortar you are working with, are at room temperature. Differing temperatures can cause the aïoli to separate. When making aïoli - or any mayonnaise-like sauce - think slow, slow, slow. There is a simple remedy for separated aïoli. Put an egg yolk in another bowl, and slowly whisk the separated aïoli into it.
Tahini Mint Sauce
Can be prepared in 45 minutes or less.
Chocolate-Almond Sauce
For a nice gift, simply decorate the jars with gold ribbon, and attach tags that include the rewarming instructions. Or pack a basket with a jar of this sauce, Coffee-Caramel Sauce , an ice cream scoop and four or six sundae goblets.
Blackberry-Raspberry Sauce
Can be prepared in 45 minutes or less.
Thyme Pesto
Parsley and thyme replace the usual basil in this sauce. Try it on cooked vegetables.
