Rich Caramel Sauce

Burnt caramel is all the rage lately, and for good reason. The slightly bitter notes counter the sugar’s sweetness so that the result is a complex and balanced flavor, not just direct sweetness. It’s important to stop cooking the caramel at just the right moment, which is only a few seconds before it’s scorched. Recipes often advise cooking the caramel until it just begins to smoke, but it isn’t until it begins to foam a bit that its best flavor comes forward. To one-up burnt caramel, you can make salted-butter burnt caramel sauce by using salted butter and stirring in additional salt (preferably flaky sea salt) to taste. It’s delicious!

Tangerine Butterscotch Sauce

With the addition of sprightly tangerine juice, this twist on traditional butterscotch sauce goes very well drizzled over Buckwheat Cake (page 44) paired with orange or tangerine sections instead of the cider-poached apples, or spooned over Pâte à Choux Puffs (page 232) filled with Caramel Ice Cream (page 144) and topped with toasted or candied nuts.

Sriracha Pesto

While certainly decadent enough on its own as a dip for crusty baguette or chewy ciabatta, this pesto is right at home as a base spread for all sorts of panini. Of course, it’s also a natural tossed in with penne or fusilli pasta (hot or cold), and it makes an excellent marinade or finishing sauce for chicken, salmon, or any delicate whitefish.

Raspberry Sauce

A refreshing and versatile sauce, this pairs nicely with ice cream, cake, fruit, and chocolate desserts. Make a couple of batches and divide into several small freezer storage bags and store frozen for up to 6 months.

Hot Buttered Rum Sauce

This is a delectable and buttery-tasting sauce, guaranteed to take any dessert from simple to sublime in a single spoonful. You’ll find one hundred and one reasons to add this to your favorite desserts.

Lemon Tofu Crème

This is a wonderful all-purpose topping for cakes, fresh fruit, granola, and more. Though the taste is rich and velvety, it’s actually low fat and packed with protein as an added bonus.

Sweet cherries are delicious as a cake filling and make a luscious topping for cheesecake.

Agave Fudge Sauce

For an agave nectar dessert home run, top an Ultimate Fudgy Brownie (page 37) with your choice of vanilla ice cream or frozen yogurt, add this hot fudge sauce, and top it off with Agave Nectar Whipped Cream (page 113).

Vanilla Crème Anglaise

Substituting evaporated skim milk for some of the cream reduces the fat yet maintains the richness of this classic dessert sauce.

Sweet and Savory Yogurt

Yogurt is a wonderful international culinary staple that’s been subverted by American agribusiness. Contrary to popular belief, genuine yogurt is anything but the thick, overly sweetened blend you’re likely to find in the refrigerated section at your local grocery store. Designed as quickie substitutes for breakfast, too often they’re laden with copious sugar for a rapid ride on the glucose express. Real yogurt—the healthier version known to the rest of the world—is generally much lighter. It’s also served in a wider variety of contexts, such as Indian raitas, served as a condiment, and Greek tzatziki, a combination of cucumbers and yogurt served as a dip, condiment, or spread. Yogurt (the name is Turkish) is meant to refresh, and this version is an ideal topping on cucumbers, lamb, or Middle Eastern Chickpea Burgers (page 112). Parsley Basil Drizzle

Drizzles and dollops are very helpful for people who are dealing with impaired taste buds as a result of treatment. Drizzles are a bit like Roman candles; they light up the palette. They’re lighter than dollops, but don’t be fooled; the parsley in this drizzle is like a whiff of pure oxygen. It’s that energizing.

Signora’s Tomato Sauce

I cooked for a lot of crazy signoras when I lived in Italy, and one of them whipped me into shape by insisting that the tomatoes for tomato sauce be put through a food mill first. For the uninitiated, it’s kind of like an old coffee mill, but with a more tightly geared hand crank. In would go the roasted tomatoes, and each crank by hand would squeeze them through holes in the side of the mill. I needed a tube of Bengay for my arms after the first batch, but the result is a far lighter sauce than any store-bought variety. If you’re not up for the workout, just lightly pulse the tomatoes in a food processor.

Cashew Cream

You know that old Sesame Street song that goes, “One of these things is not like the others …”? Put a cashew next to butter and margarine, and you’ll probably think, “Hey, I know which one of these doesn’t belong.” Think again. I’ve pleased many a client who swears by butter but wants to go dairy free by substituting nut creams, in this case pulverized cashews. Not only is the taste fulfilling and delightful, nuts are far better for you than any store-bought buttery spread made from corn oil.

Pistachio Cream

When I was in high school, my idea of a great time was sitting on the floor with my best friend Jill and devouring a huge bag of pistachios while we discussed which cute boys we had crushes on. By the time we were done, we were knee-deep in shells and soul-deep in feminine solidarity. Little did I know we were also improving our health. Turns out those pistachios are their own wellness center, rich in potassium (for cell fluid balance and nerve function), magnesium (for enzymes that help catalyze the body’s energy), thiamine (for appetite stimulation), and vitamin B6 (for protein absorption).

Basil Lemon Drizzle
