Salade Chaude aux Lentilles Avec Vinaigrette à la Moutarde
Common brown lentils may be substituted for the lentils of Le Puy but they cook much more quickly- in about twelve minutes initially. In this recipe the carrots may be cooked separately in boiling salted water until tender for a brighter color. Lentilles du Puy (French green lentils) are available at specialty foods shops and some natural foods stores.
Chilled Beet Soup with Chives
The lovely color and tangy taste of this starter make it a real crowd pleaser. Can be prepared in 45 minutes or less but requires additional unattended time.
Irish Stew
There must be as many versions of this—Ireland's national dish—as there are cooks. One thing all recipes should say is that the stew is to be cooked slowly until the lamb is meltingly tender. This stew is the ideal dish to return to after a day in the open air, as it can be made ahead and reheated while cook and guests enjoy the hot punch.

Gingery Sweet Pickled Vegetables
I first tasted this Cantonese pickle in a commercial version that I bought in Seattle's International District. The pickle contained stem ginger, in thick pieces so tender that you could eat them right along with the other vegetables. If you happen to grow your own ginger, by all means use the stems in this recipe. Otherwise, include the ginger just as a flavoring.
The children who have tasted this pickle love it just as much as the adults do.
