Buckwheat—which is, in fact, not wheat at all—is a gluten-free seed that can be ground into a beautiful flour. Here that flour adds a deep, earthy flavor to spiced chicken-filled crepes. A great dinner all around, these crepes may be a particularly good option for anybody living with IBD, Crohn’s, or colitis, as it adheres to low FODMAP diet standards. It’s also great for anyone aiming to eat smaller, more frequent meals (often a recommendation for managing Crohn’s)—simply opt for two crepes rather than three. There’s no perfect-for-everyone diet for those living with Crohn’s, says registered dietitian Andrea Kirkland; instead, each person has to figure out the foods that personally work for them, as well as the foods to avoid.
