Cocoa Shortbread Diamonds

Name: Cocoa Shortbread Diamonds
Yield: Makes about 1 dozen
Ingredients: 1 cup all-purpose flour, plus more for work surface; 1/2 cup confectioners’ sugar; 1/4 cup unsweetened Dutch-process cocoa powder; 1/4 teaspoon coarse salt; 1/2 cup (1 stick) cold unsalted butter, cut into small pieces; 1/2 teaspoon pure vanilla extract; 2 ounces best-quality white chocolate, coarsely chopped
