Olive-Oil Mashed Potatoes

Ingredients

1 1/2 pounds waxy potatoes (about 4 medium), peeled and cut into 1-inch chunks
Coarse salt and ground pepper
2 tablespoons olive oil, plus more for serving (optional)
1/2 cup skim milk

Preparation

  1. Step 1

    In a large saucepan, cover potatoes with cold water by 2 inches. Bring to a boil; add 1 tablespoon salt. Cook until potatoes are very tender when pierced with a fork, 20 to 25 minutes. Drain; transfer to a large bowl.

    Step 2

    Using a potato masher or fork, mash potatoes until smooth; add oil and milk, mashing until combined. Season with salt and pepper. Drizzle with more oil before serving, if desired.
