Perfect Rice

Rice acts as a base for many a saucy dish, so you should never take it for granted. It’s gotta be every bit as good as the food you serve it with. Rinsing the rice before cooking gets rid of the floury starch that clings to the grains and makes cooked rice sticky and lumpy, and adding some garlic boosts the flavor.

Ingredients

2 cups water
1 tablespoon olive oil
1 teaspoon kosher salt
2 cloves garlic, crushed
1 cup long-grain rice

Preparation

  1. Combine the water, olive oil, salt, and garlic in a saucepan. Turn up the heat and bring to a boil. Meanwhile, put the rice in a sieve and rinse under running water til the water loses its milky look and runs clear. Add the rice to the boiling water, cover the pan, reduce the heat to a simmer, and cook for 20 minutes. Fluff with a fork and cook a bit more if it seems too moist.
