Modern Macaroni Salad

This recipe can be prepared in 45 minutes or less. The pickles add crunch and tangy flavor to an old-time favorite.

Carrots with Ginger

Larry Patten of Fresno, California is always looking for new ways to prepare vegetables, so he was happy to be served some wonderful carrots at a wedding in Bellingham, Washington. The food at the event was handled by Elegant Affairs Catering.

Chipotle Turkey Cutlets with Charred Corn Salsa

Serve with: Warmed tortillas and steamed, buttered summer squash. Dessert: Key lime pie from the bakery.

Chicken Scarpariello

You can save some prep time by asking a butcher to cut the chicken thighs in half for you. This dish is particularly good served over orzo.

Grilled Rib-Eye Steaks with Chili Cumin Spice Rub

The spice rub that we have used in this recipe works equally well with other steaks such as sirloin.

Chow Fun with Barbecued Pork and Snow Peas

This recipe incorporates two popular foods from the Toi San region of southern China: One is the Chinese boneless barbecued pork strips known as cha siu, and the other is fresh rice noodles. The latter are sold in 1-pound packages, either as rumpled sheets that must be cut into strips or as precut 1/2-inch-wide strips.

Two-Bean and Corn Salad

"I run my own salon, and I’m an instructor at a cooking school," writes Sandy Ercolano of Ridgewood, New Jersey. "It seems that I’m always in the kitchen. At home I cook meals and come up with recipes for my classes. My son Andrew appears to have inherited my culinary interest. He likes to lend a hand with the cooking, especially with desserts. Unfortunately, he’s not as interested in helping with the cleanup."

Slow-Cooked Hoisin Pork Roast with Green Onions

Hoisin sauce — a combination of soybeans, garlic, chiles, and spices — lends a sweet-spicy flavor to this pork roast. Look for it at Asian markets and well-stocked supermarkets. What to drink: Uncork an Australian Merlot or a New Zealand Sauvignon Blanc.

Grilled Ham and Swiss Sandwiches

Serve with: Red cabbage slaw and pickles. Dessert: Fudge brownies.

Roast Cornish Game Hen with Spring Vegetables

This recipe can be prepared in 45 minutes or less. Begin with endive spears dressed with oil and vinegar. Orzo pilaf with cherry tomatoes is a nice accompaniment. For dessert, have rhubarb compote with crème fraîche.

Sauteed Turnips and Parsnips with Rosemary

Active time: 35 min Start to finish: 35 min

Micro-Quick Hot-Sweet Salad of Broccoli Raab and Carrots

I'm not a big fan of microwaving, but in this case, it preserves both vegetables' deep color and nutrients as it speeds cooking. The honey and sweet sherry accents temper the bitter broccoli raab for a side dish that's fast, fresh, pretty.

Chicken Tagine with Chickpeas and Mint

This one-pot dish is delicious over couscous. What to drink: Wines with distinctive spice notes, such as Gewürztraminer or Syrah.

Halibut in Pernod Broth with Fennel and Asparagus

Chef Ludovic LeFebvre writes: "I'm looking forward to the opening of my restaurant, Ludo, this fall. It's going to be different from the elaborate French cuisine I've done in the past: People are interested in lighter and healthier foods now, and I want my cooking to reflect that. For me, that means using the best ingredients in simple ways. "Before coming to America, I apprenticed with some of France's best chefs, like Marc Meneau and Alain Passard. I was lucky to have such great teachers, but after two years of working 17-hour days, it was time for a change. Moving to Los Angeles definitely altered my work habits. My days in the kitchen are shorter, and there's more opportunity to enjoy cooking at home. " Sophisticated flavors; simple techniques. Serve with crusty bread.

Turkey Nachos

Active time: 35 min Start to finish: 45 min

Andouille Grits

Chef Tory McPhail writes: "I was 19 years old and just out of culinary school when I first started at Commander's Palace. Despite my training, nothing prepared me for the pressures of working in a fast-paced kitchen, or in a restaurant of such high quality. I think my success came down to sheer effort and a lifelong passion for cooking. Even as a kid I loved playing with cookie and pie dough. "After a seven-year absence, which I spent working abroad and opening a new Commander's Palace restaurant in Las Vegas, I came back to New Orleans last year. Since returning I've enjoyed cooking for my friends. On the weekends we'll go fishing, and then I'll grill our catch and serve it along with a fresh salad. That meal combines the two best things about living in the South — lots of fishing and great fresh produce." Serve these creamy grits with fried eggs for a southern-style breakfast. Andouille, a spicy pork sausage, is available at specialty foods stores and some supermarkets.
