Chinese Noodles with Sesame Dressing

Ingredients

8 ounces thin Chinese noodles
1 tablespoon vegetable oil, such as safflower
1/4 cup fresh lime juice (from 2 to 3 limes)
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
2 teaspoons light-brown sugar
1/8 teaspoon crushed red-pepper flakes
3 tablespoons coarsely chopped cilantro
Coarse salt and ground pepper

Preparation

  1. Step 1

    Bring a pot of water to a boil. Cook noodles until tender according to package instructions. Drain; rinse under cold water until completely cool. Transfer to a large bowl; toss with vegetable oil.

    Step 2

    In a small bowl, whisk together lime juice, soy sauce, sesame oil, brown sugar, and red-pepper flakes; whisk in cilantro. Pour over noodles; season with salt and pepper, and toss to coat.
