Horseradish Cocktail Sauce

Potato-and-Sausage Torrelli with Ragù

(Tortelli di Patate alle Salsicce con ragù) The recipe makes more pasta dough than you'll need for the tortelli. Roll out the extra, and cut it into 1/2-inch-wide ribbons for pappardelle, 1/4-inch-wide ribbons for fettuccine, or any length and width you prefer. The pasta can then be used fresh, or it can be dried for use at a later time (leave the pasta on floured kitchen towels at room temperature until it is dry). Or use all of the dough for any recipe that calls for one pound of fresh pasta.

Provencal Oven-Roasted Tomato Sauce

Sweet Basque Cream (Natillas)

At the restaurant Marichu, we offer this sweet, liquid custard as a dessert in itself, served in small custard cups. But natillas is also used in countless Basque recipes as a sauce. Although we in the Basque Country claim this sauce as our own, the French make a similar sauce and call it crème anglaise — thereby crediting the English as its inventors. This recipe can be prepared in 45 minutes or less. This is traditionally served with sliced cold veal, but we also like it with turkey or as a dip for vegetables.

Fresh Orange-Cranberry Sauce with Walnuts

"My profession as a real estate agent requires a lot of my time," writes Edi Meadows Morrissette of Westin, Florida, "so it helps that I am lightning-fast in the kitchen. Triple-Mustard Sauce

Mustard and honey are a combination that's ideal for lamb or tuna steaks. It's a bit too pungent to use for dipping, but the flavor mellows with cooking. Brush the sauce liberally on meat or fish before and during grilling. The recipe makes enough for about 1 1/2 pounds of lamb or fish. Any marinade coming in contact with raw meat, seafood or poultry must be boiled for one minute before using it for basting.

Caribbean Coconut Curry Sauce

Brush this slightly sweet lime-scented sauce on shrimp or chicken before and during grilling. The recipe makes enough for 1 1/2 pounds of chicken or shrimp, with some left over to pass at the table.
